Instant Pot Spicy Pinto Beans

Pinto beans. We love pinto beans! I am NOT a fan of canned pinto beans though, they are salty and just ew. Why get canned when you can make your own! (Freeze too!)

If you follow along, you know that I already have a pinto bean recipe on the blog. You can find it here. This time we are going to make them with the Instant Pot!

Ingredients:

4 cups dry pinto beans
1 large onion, chopped
2 red bell peppers, seeded and chopped
garlic cloves, minced
2 whole jalapenos, sliced or chopped (3 if you like a little extra kick, we use 4)
2 teaspoons salt, more to taste
2 teaspoons chili powder
2 teaspoons black pepper

Directions:

Rinse and pick through your dry pinto beans. You are looking for tiny rocks. Tiny rocks that could chip your tooth. Ouch...

Rinse beans. They are dirty...

Throw rinsed, UNSOAKED beans into your Intant Pot. (Now with the Instant Pot I don't have to remember to soak them and I will still have delicious beans in 40 minutes!)

Chop veggies, and measure out spices. Throw them in your Instant Pot.

I mix everything together, I don't know if that makes a difference, BUT it can't hurt right?

Fill your Instant Pot with water until the beans are covered plus about two inches.

Place the lid on your Instant Pot, per manufacturer's instructions. Set to "Manual" and increase the time to 40 minutes.

That's it! The best part of this new recipe using the Instant Pot is that I can walk away and not come back until they are done! When you first open the pot, it will seem like there is a lot of liquid. Don't worry! If you don't want that much liquid you can reduce the liquid to 8 cups. Just make sure that the beans are covered with at least 2.5 inches of water!

The beans will absorb more of the liquid as they cool AND the liquid will thicken up to create an almost gravy like consistency. Sounds gross.... tastes good! At this point make sure they have enough salt. I almost always add more at the end. Better to add more at the end than a SALTY pot of beans!

Again...bam! Who needs canned? Not us... To store in the freezer allow for the beans to cool completely and spoon them into freezer safe storage bags. I do about 2 cups in each bag.

These are also amazing "refried." I don't fry them though, I smash them up in the Mexican gravy, a.k.a cooking water.

5 Thoughts Friday 6-24-2016

1. The kids love the garden! Kellen even has started giving Alana "advice." In other words telling her what to do. "Alana don't water the leaves. Alana that's enough you are going to drown him!" She just nods. I would love to know what she is thinking when he is bossing her around. Is she actually listening to his advice or is she just thinking that if she nods he will stop talking?

2. In other garden news. Something is munching on my once beautiful kale. Gah, I don't even think kale is that tasty but obviously something does. Maybe said pest knows of its health benefits? Note to self... must research kale thieves and how to evict them from my garden.

3. It has been an extremely busy travel agent week! Why? Disney released packages for 2017! I AM SO excited to help my clients plan their magical vacations! Need a planner? I'm your girl! (AND my services are FREE!)

4. A little background. I often get picked on about my choice in hobbies. I like scrapbooking, canning, crochet, and now gardening. My friends tell me I have the hobbies of a 70 year old retiree. I'm ok with that. I like to spend my time doing things that produce something tangible. Now that you know this, I started a new crochet project that I probably don't have time for. (Who needs to sleep?) It's not my fault. My friend (ahem Kim) texted me the link to a blog. Guess what I found on said blog? A free, yes FREE pattern for a Harry Potter blanket! I must have this blanket. My first attempt was ok, but I made a mistake somewhere in the middle and won't be able to fix it. Here it is. It is suppose to look like the Deathly Hallows symbol when it is done. Hmm...

My next attempt will (hopefully) look like this! oooooooo......

This is what the blanket will look like when ALL done! (Again, hopefully...)

If you would like to give it a try with me you can find the patterns here.

She has some pretty awesome stuff. I'm fangirling. She even has Star Wars and will soon be doing a Disney Princess graphgan! Her site makes me feel like this...

5. Amazon, my best friend, delivered my shiny, new Leuchtturm1917 notebook. It will be the home of my bullet journal. I have been keeping one inside of my happy planner with printed dot grid inserts, BUT I thought I would give this a try. I am excited to start!

If you want to give bullet journaling a shot with me you can get your very own below!

The Plant Pied Piper

It has been one month since we planted our garden AND I haven't killed everything! In fact, it is thriving! I am so excited.

When we got back from vacation Saturday I ran to see how it was doing and with all the rain we got last week the garden exploded! (Note to self... we NEED a rain barrel!)

Now, I can't take 100% of the credit for the status of the garden right now. My mother-in-law graciously watched our doggies and tended to my garden while we were gone.

Now, a little background. She is an AWESOME gardener. She hasn't planted a garden in a long time, BUT she still has the magic touch and I will now call her the plant whisperer. Better yet, she is the plant pied piper! I envision her sitting out there playing her magical pipe, entrancing them to grow, grow, grow. Too much? Nah!

She can come over anytime!

Here is my garden! Doesn't it look awesome? Please disregard the random hose. I need to buy one of those hose holders. (Is that what they are called? Eh...)

A little closer! A lovely sea of green!

I have peppers!

andddd..... itty bitty baby tomatoes!

Oh and one last thing... I harvested my very first crop! Look at my radish! I can call myself a gardener now! Yay!

Let's hope this momentum continues!

Happy gardening!

Happy Planner Freebie - Fitness Insert

Since my weight loss in May was less than stellar, as in non existent, I decided that I really needed something to help keep me on track for June and hopefully longer.

If you have been following along, you know that I love my Happy Planner. It helps keep my busy life organized.

I will still use the MyFitnessPal app on my phone for on the go logging and looking up calories, BUT this insert will help with meal planning and motivation. I need the MOTIVATION, and ACCOUNTIBILITY!

So far so good. I even made it through the weekend on plan which is huge for me. Since the beginning of this weight loss journey weekends have always been my downfall.

Please note... You will need a .PDF Reader - you can get one here for FREE.

This insert is designed to print on a full "8.5by11" sheet of paper and then TRIMMED TO FIT your planner.

Make sure to print them in "actual size" so they fit perfectly in your planner! After printing, you will simply need to trim down the excess on the sides so that it measures to The Happy Planner size of 7" x 9.25".

5 Thoughts Friday 6-2-2016

Weeding. I actually LOVE weeding. Had I known I would have felt like a character from Animal Crossing planting a garden, I would have started gardening eons ago! I must pick ALL the WEEDS! It's the little things right?

June was NOT a good month for my weight loss journey. I made a new insert for my Happy Planner. So far so good. Let's hope it helps keep me focused. I will be posting it as a FREEBIE on Monday for those who would like to try it out with me!

The wedding I am shooting on Saturday will have Star Wars elements mixed in its decor! Say what? I AM SO EXCITED. Man, had I worked harder, I could have worn my PEW PEW shirt. Of course I would have to dress it up, but urg, I am sad to say it still doesn't fit. MOTIVATION! I need to get into gear just in case I shoot another Star Wars themed wedding... someday. It could happen right?

Is it crazy that the idea of this little plant dying breaks my heart? I was really hoping for zero plant deaths this summer. I don't think that is going to happen. Poor plant...

Instant Pot update. In case you were wondering. I LOVE MY INSTANT POT. Spicy pinto beans in 40 minutes? Yes please! I even started with dry, unsoaked beans! Best part? You turn it on and walk away. Bam! GAME CHANGER... I will post the recipe here in the near future.

Happy weekend!

May Recap and June Goals

A new month has started and I am no closer to my goals. Wait for it.... wait for it....  I lost 0 pounds in the month of May. I was extra awesome (NOT awesome) and even GAINED 2.6 more!

I didn't want to write this post today and to be 100% honest, I wanted to fib. I wanted to write that I lost 4 pounds and work EXTRA hard in June to not only lose those 4 fibtastic pounds plus 4 more. I couldn't lie though. (I am not good at it.) I won't. What would that accomplish? I've spent far too long lying to myself.

I just really didn't want to admit that I had another unsuccessful month. I am disappointed in myself and a little embarrassed that everyone now knows. (Thank you blog... just kidding!)

BUT... it is a new month. I am the keeper of my body and need to take responsibility for my actions and lack of action.

There are only 99 days until our next Disney vacation! I am so excited that we are finally in the double digits of our Disney count down, BUT I am also sad that I might not hit my pre-trip goal.

So what happened? The same thing that happened in April...lack of consistency. I did well for a few days and then just stopped. My May habit tracker is definitely an indication of my inconsistency issues. I guess I thought there were only 5 days in the month of May? Gah...

I didn't make my fitness journey a priority and it needs to be. I will be designing a fitness insert for my Happy Planner. It needs to be more detailed then the above monthly tracker.

Goal for June? Fill out my fitness insert every day. Hopefully it will help me get over this two month slump.

How do you keep yourself accountable in your weight loss goals? I will take any tips anyone has to offer. I obviously need them.

Keep trekking... I'm going to.
