Instant Pot Spicy Pinto Beans

Pinto beans. We love pinto beans! I am NOT a fan of canned pinto beans though, they are salty and just ew. Why get canned when you can make your own! (Freeze too!)

If you follow along, you know that I already have a pinto bean recipe on the blog. You can find it here. This time we are going to make them with the Instant Pot!


4 cups dry pinto beans
1 large onion, chopped
red bell pepper, seeded and chopped
garlic cloves, minced
2 whole jalapenos, sliced or chopped (3 if you like a little extra kick, we use 4)
2 teaspoons salt, more to taste
2 teaspoons chili powder
2 teaspoons black pepper


Rinse and pick through your dry pinto beans. You are looking for tiny rocks. Tiny rocks that could chip your tooth. Ouch...

Rinse beans. They are dirty...

Throw rinsed, UNSOAKED beans into your Intant Pot. (Now with the Instant Pot I don't have to remember to soak them and I will still have delicious beans in 40 minutes!)

Chop veggies, and measure out spices. Throw them in your Instant Pot.

I mix everything together, I don't know if that makes a difference, BUT it can't hurt right?

Fill your Instant Pot with water until the beans are covered plus about two inches.

Place the lid on your Instant Pot, per manufacturer's instructions. Set to "Manual" and increase the time to 40 minutes.

That's it! The best part of this new recipe using the Instant Pot is that I can walk away and not come back until they are done! When you first open the pot, it will seem like there is a lot of liquid. Don't worry! If you don't want that much liquid you can reduce the liquid to 8 cups. Just make sure that the beans are covered with at least 2.5 inches of water!

The beans will absorb more of the liquid as they cool AND the liquid will thicken up to create an almost gravy like consistency. Sounds gross.... tastes good! At this point make sure they have enough salt. I almost always add more at the end. Better to add more at the end than a SALTY pot of beans!

Again...bam! Who needs canned? Not us... To store in the freezer allow for the beans to cool completely and spoon them into freezer safe storage bags. I do about 2 cups in each bag.

These are also amazing "refried." I don't fry them though, I smash them up in the Mexican gravy, a.k.a cooking water.


5 Thoughts Friday 6-24-2016

1. The kids love the garden! Kellen even has started giving Alana "advice." In other words telling her what to do. "Alana don't water the leaves. Alana that's enough you are going to drown him!" She just nods. I would love to know what she is thinking when he is bossing her around. Is she actually listening to his advice or is she just thinking that if she nods he will stop talking?

2. In other garden news. Something is munching on my once beautiful kale. Gah, I don't even think kale is that tasty but obviously something does. Maybe said pest knows of its health benefits? Note to self... must research kale thieves and how to evict them from my garden.

3. It has been an extremely busy travel agent week! Why? Disney released packages for 2017! I AM SO excited to help my clients plan their magical vacations! Need a planner? I'm your girl! (AND my services are FREE!)

4. A little background. I often get picked on about my choice in hobbies. I like scrapbooking, canning, crochet, and now gardening. My friends tell me I have the hobbies of a 70 year old retiree. I'm ok with that. I like to spend my time doing things that produce something tangible. Now that you know this, I started a new crochet project that I probably don't have time for. (Who needs to sleep?) It's not my fault. My friend (ahem Kim) texted me the link to a blog. Guess what I found on said blog? A free, yes FREE pattern for a Harry Potter blanket! I must have this blanket. My first attempt was ok, but I made a mistake somewhere in the middle and won't be able to fix it. Here it is. It is suppose to look like the Deathly Hallows symbol when it is done. Hmm...

My next attempt will (hopefully) look like this! oooooooo......

The Plant Pied Piper

It has been one month since we planted our garden AND I haven't killed everything! In fact, it is thriving! I am so excited.

When we got back from vacation Saturday I ran to see how it was doing and with all the rain we got last week the garden exploded! (Note to self... we NEED a rain barrel!)

Now, I can't take 100% of the credit for the status of the garden right now. My mother-in-law graciously watched our doggies and tended to my garden while we were gone.

Now, a little background. She is an AWESOME gardener. She hasn't planted a garden in a long time, BUT she still has the magic touch and I will now call her the plant whisperer. Better yet, she is the plant pied piper! I envision her sitting out there playing her magical pipe, entrancing them to grow, grow, grow. Too much? Nah!

She can come over anytime!

Here is my garden! Doesn't it look awesome? Please disregard the random hose. I need to buy one of those hose holders. (Is that what they are called? Eh...)

andddd..... itty bitty baby tomatoes!

Oh and one last thing... I harvested my very first crop! Look at my radish! I can call myself a gardener now! Yay!
